unfortunately, wordpress doesn’t have a possibility to order the categories, but to change order of posts in portfolio
the easiest way would be to change the post date of your items.
To change the date of a post on your Page:
Go to the post on your Page’s Timeline.
Click in the top-right corner of the post.
Select Change Date.
Choose the year, month, date and hour where you want the post to appear on your Page’s Timeline.
Click Ok and then Update.
To change the name of the category “All” you need two .php files:
page-portfolio-3columns.php
page-portfolio-4columns.php
(you can find those files here wp-content\themes\dzen)
In that files please search “All” and replace with “Some word you want”.
To solve this last question, please go to your index.php file and search

Insted of “Read More” text write what you need.
